3 lb pork roast – this can be a shoulder or any other bone in roast

2 TBSP Caribbean Jerk Seasoning

4 TBSP Cumin

2 TBSP Cardamom

1 tsp White Ground Pepper

1 tsp Cayenne Pepper

2-3 TBSP Dried Onions

2 whole peeled garlic cloves

Salt – to taste

Place pork roast into slow cooker (Crockpot) and add all the spices, whole garlic clove and a little salt.  Add water so that it almost covers the roast entirely.  Cook on low heat overnight.  In the morning, take 2 forks and shred the meat – also removing any fat and bones that separate.  Discard the fat and bones and let simmer a in the juices until ready to serve. 

Chipotle Mayo

Place about 1 cup of mayo and 3 small chipotle peppers (canned in Adobo sauce) in a food processor.  Blend until smooth and fully mixed. 

Serve Cuban pork on a bun with Chipotle mayo!  Enjoy!!

**This meat also freezes very well or can be used in burritos!!
